This delicious banana bread is very simple to prepare, and easy to personalise to your taste: you could try adding cinnamon and ginger, or some walnuts.
Ingredients
2 cups of plain flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of butter
3/4 cup of brown sugar
2 eggs, beaten
about 5 mashed overripe bananas
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, mix the flour, baking soda and salt.
3. In a separate bowl, cream together butter and brown sugar. Stir in the eggs and mashed bananas until well blended.
4. Stir the banana mixture into the dry ingredients. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool for 10 minutes, then turn out onto a wire rack.
