Easy Cheesecake Recipe

This simple cheesecake couldn't be easier to make, but make sure that you prepare it well before serving to allow time for the topping to set.

10 digestive biscuits
30g (1 oz) of butter
small tin of condensed milk
125g of cream cheese
Juice of one lemon

1. Crush the digestive biscuits into a powder using a rolling pin.
2. Add the butter and press it together with the crumbs to make a dough. This will be the cheesecake base. Press the dough into the bottom of a greased 9 inch pie dish.
3. Mix the condensed milk and cream cheese together, and whisk for one minute.
4. Squeeze in the lemon juice and whisk for another 20 seconds.
5. Pour the mixture into the pie dish.
6. Leave in the fridge to set.
