Carrot Cake Recipe

Ingredients for Carrot Cake
3 cups of grated carrots
4 eggs
1 and 1/4 cups of vegetable oil
2 cups of white sugar
2 cups of sifted plain flour
2 teaspoons of baking powder
2 teaspoons of baking soda
1 cup of golden raisins
1 teaspoon of ground cinnamon
1 teaspoon of salt
1/2 teaspoon of ground nutmeg

Ingredients for Cream Cheese Icing
1/2 teaspoon of vanilla extract
3 ounces of cream cheese
1 tablespoon of corn syrup
1 and 1/4 cups powdered sugar

Directions for Carrot Cake
1. Beat the sugar, oil and eggs together.
2. Sift the flour, baking powder, baking soda, salt and spices together and add the carrots and raisins.
3. Mix together the dry ingredients and egg mixture.
4. Pour mixture into a well greased baking tin. Bake at 350 degrees farenheit (175 degrees C) for around 60 minutes.

Directions for Cream Cheese Icing
Blend powdered sugar, corn syrup, cream cheese, and vanilla extract and spread on the cake after it has thoroughly cooled.
